Dale Carey Simpson
September 15th 1931 – September 19th 2025
It is with heavy hearts that we announce the peaceful passing of Dale Carey Simpson, at the age of 94, in his home surrounded by loved ones. Dale was born on September 15, 1931, to Wayland and Viola (Feustel) Simpson in Waupaca, Wisconsin. He grew up alongside his sister, Bernadine, and brother, JR Simpson, and forged a life marked by adventure, service, and success.
At the young age of 16, Dale left high school and enlisted in the U.S. Army, proudly serving three years in Japan. His service was one of many defining chapters of his remarkable life. In 1955, Dale married his beloved wife, Virginia Carol Ultang, and together they built a life full of love, laughter, and shared passions.
Dale and Virginia were partners in both life and business, owning and operating several iconic restaurants, including The Vintage House, The Red Ox, and the cherished Simpson's Restaurant. Their legacy became a cornerstone of the community, and Dale’s passion for food—and perhaps a drink or two—was matched only by his love for storytelling.
Beyond his work, Dale had many interests that brought him joy: fishing, hunting, and playing countless rounds of golf were among his favorite pastimes. A smart, well-spoken man, Dale had a gift for telling stories—stories that will be shared by his family for generations to come, ensuring that his memory lives on.
Dale was preceded in death by his loving wife, Virginia, who passed on August 18, 2022. He is survived by his two sons, Carey (Amy) and Tom, his grandchildren, Ashley (Will), Joseph and Rylie and his great grandchildren Odin Allen and Charly Brostrom. Dale will be deeply missed by all who knew him. His long and full life was never without its exciting moments, and his spirit and warmth will be remembered forever.
The family extends their deepest gratitude to Cali Nelson and the entire team of caregivers who provided Dale with compassionate, 24/7 care during the final years of his life. Your support allowed Dale to enjoy his last years peacefully at home, just as he wanted. You will always hold a special place in the hearts of his family.
A celebration of Dale’s life will be held at Simpson’s Restaurant in Waupaca on Wednesday October 1st from 12pm-4pm.
